Doesn't he have some Irish heritage....... Could explain a lot lolol All my cider is done just playing the waiting game now. Should be "drinkable" in a few weeks. But I will leave it for a lot longer. Also purchased a 20 litre seasoned oak barrel from here www.oak-barrel.com/barrels_and_ornaments/wine_barrels.htmSo going to see how that alters the flavour of a batch of apple cider then buy another one if it improves it.

That looks good. I know some home brewer who have used wooden chips when fermenting beer. but that looks great for cider.
